Coffee-to-Water Ratio is the Key
Before we brew coffee, we need to learn about coffee-water ratio so that we can make a coffee with good taste. Here is a reference table for you:

However, during brewing process, strictly adhering to a fixed coffee-to-water ratio can be difficult, especially for beginners. We recommend experimenting with different pouring volumes through consistent practice until you find the ratio that perfectly matches your personal taste preferences.
Pouring is an Art
Many people believe the secret to perfect pour-over coffee lies in the rhythm of your circular pouring motion.
Actually the key of pour-over brewing is the synergy between water flow height and pouring rhythm. The height of the water stream directly determines the impact force and temperature of the water column, which influences extraction efficiency and final flavor.
Pour from about 15 to 20 centimeters above the coffee bed. At this height, the stream hits with enough force to stir the grounds pretty aggressively. This is exactly what you want for light roasts, where you're fighting to extract enough flavor. The stream breaks up clumps and keeps the coffee moving, making more surface area stays in contact with water.
When the pouring height exceeds 30 centimeters, the water stream breaks into individual droplets like a string of pearls before reaching the coffee bed. Some parts of the bed get blasted, others barely touched. And you will get a cup with sour and astringent coffee finally.
Temperature and Brewing Time Are Core
Both the temperature of the water and the total brewing time will significantly impact the flavor profile of your final cup.
1. Water Temperature
Water temperature directly affects the extraction rate and the resulting flavor. You can use a thermometer to control it precisely. Generally, different water temperatures are recommended for coffee beans with different roast levels.
For light roast beans, water at 88-92°C will deliver a delicate and balanced flavor profile.
For medium and dark roast beans, temperature at 92-96°C will perfectly unlock the complete flavor.
2. Brewing Time
Brewing time is also important. Too short results in a weak, watery cup, while too long leads to over-extraction, producing a strong and bitter coffee.
◉Under 2 minutes: Under-extraction occurs, resulting in a thin, sharp, and sour flavor profile.
◉2-3 minutes: This is the optimal brewing time, which fully unlocks the coffee's complete flavor and aroma.
◉Over 3 minutes: Over-extraction draws out bitter compounds, leaving the cup tasting dry and astringent, with a harsh burnt finish.
Correct Cup for Perfect Taste
Once you've completed your entire pour-over brewing process, the choice of cup will also have a distinct impact on the carefully crafted coffee in your hands.
1. Stainless Steel Cups
Stainless steel is the top choice for to-go cups, but it leaves a metallic taste in your coffee. Moreover, the acidic compounds in coffee will break down the stainless steel material over prolonged contact, leaching toxic substances. Although this does not pose a significant health risk for most people, we still recommend treat with caution.
2. Glass Cups
Glass coffee cups are currently popular in the market, primarily because glass keep original taste of coffee without off-flavor. However, glass doesn't play a good role in Heat insulation. When coffee getting cold, its acidity and bitterness become significant, which directly influence the taste and flavor.
3. Ceramic Cups
Ceramic boasts excellent thermal insulation. Premium ceramic helps retain the coffee's taste and aroma. It is good for you to appreciate coffee's layered flavor profile. Besides, ceramic is an eco-friendly material for environmentalist. If you are selecting a ceramic coffee cup, we suggest to choose double-walled ceramic cups with anti-scald and insulation properties, or another coffee cup with elegant wooden handle.
