The Science of Extraction: A Measurable Process

Coffee brewing that hot water dissolves the soluble compounds in coffee grounds and enter your cup of coffee. But these compounds do not dissolve all at once, they follow a fixed order:

Firstly is extract acids and volatile aromatic compounds. They bring brightness, fruit acidity and floral notes.

Second is sugars and caramelization products. They provide sweetness, body and complexity.

Last extraction is bitter compounds and tannins. That’s why over-extraction produces astringency and a dry aftertaste.

Blade Grinder vs Burr Grinder

Common blade grinders smash beans with high-speed spinning blades, producing a highly uneven particle distribution. The same batch contains both flour-like fines (below 100 microns) and coarse chunks like sugar (over 1000 microns). It means that in one extraction, fine particles are already over-extracted and bitter while coarse particles are still under-extracted. The result is a muddled, cloudy flavor.

Static in Grinding: Cannot Be Ignored

Between 2023 and 2024, a team led by Professor Christopher Hendon at the University of Oregon Chemistry Department published an important research in the journal Matter. It shows that it generates triboelectric charging from friction and particle fracture during grinding. It causes clumping, scattering and adhesion inside the grinder.

The study found that adding a tiny amount of water on the beans before grinding (about 0.05ml per gram) significantly reduces this issue. This technique, called the Ross Droplet Technique, increased espresso extraction concentration by at least 15%, because reduced clumping lets water contact the grounds more evenly.

It becomes more and more popular in specialty coffee area.
