What Happens During Roasting ?

Second Crack: About 224–227°C. The bean’s cellulose structure breaks down, and oils begin to emerge. Dark roasting beans usually pass second crack.

Maillard Reaction and Caramelization: These begin before first crack and continue, producing hundreds of volatile aromatic compounds. As roasting continues, acids break down, sugars caramelize, and bitter compounds accumulate.

Light-roast beans: Dense and hard; they need finer grinding and higher water temperature (92–96°C) for full extraction. A pour-over coffee maker is ideal; the paper filter’s clarity amplifies the bright acidity of light roasts.

Dark-roast beans: Porous and rich in oils; better suited to coarser grinding and medium-low water temperature (88–92°C). A French press’s metal filter lets more oils through, enhancing body and mouthfeel weight.
